The article deals with optimization and control of data flow during the production process in manufacturing companies. The data repository of an enterprise information system, a specific enterprise resource planning (ERP) information system, is used as the source of the data to be examined and processed. Choosing an appropriate data collection method, data processing method and establishing a clear approach in the management of a manufacturing enterprise using an ERP system is essential for successful management and production quality. The data are processed using statistical methods and the company processes are then modeled using the knowledge of the operators and technical staff. The aim of data modelling is to improve production quality and efficiency. For this purpose, the practical use of the modelling tool - the graphical modelling language UML (Unified Modelling Language) is demonstrated. Among the UML diagrams, following diagrams are used in the paper: the USE CASE diagram showing the roles of managers in modelling production quality improvement, the class diagram modelling data storage and relationships between objects, and the activity diagram modelling the process algorithm using statistical methods. The results of the analysis and modeling then have a direct impact on resource planning in the subsystem of the enterprise information system (in the ERP system).
