Interaktivní workshop prezentoval výsledky vědeckého interdisciplinárního výzkumu kulinární kultury na příkladu stravování a kulinární kultury lidových vrstev. Teoretická část workshopu uvedla účastníky do problematiky venkovské kuchyně s uvedením typických surovin a pokrmů a jejich roli v každodenním i slavnostním stravování; doplněna byla ukázkami experimentální retrogastronomie.

The interactive workshop presented the results of scientific interdisciplinary research of culinary culture on the example of diet and culinary culture of folk strata. The theoretical part of the workshop introduced the participants to the issues of rural cuisine with the introduction of typical ingredients and dishes and their role in everyday as well as festive diet; it was complemented by presentation of experimental retrogastronomy.
