Workshop se zaměřením na experimentální gastronomii a kulinární dědictví prezentoval výsledky vědeckého interdisciplinárního výzkumu kulinární kultury na příkladu pokrmů, které měly své pevné místo v kuchařských knihách 19. století, ale postupně upadaly v zapomnění. Teoretická část byla doplněna ukázkami experimentální retrogastronomie, vybrané pokrmy byly inspirovány kuchařskými knihami, např. Schlesisches Kochbuch Therese Adam, Wiener Kochbuch Louise Seleskowitz ad.

The workshop, focusing on experimental gastronomy and culinary heritage, presented the results of scientific interdisciplinary research on culinary culture using the example of dishes that had a firm place in 19th century cookbooks but gradually faded into oblivion. The theoretical part was supplemented by examples of experimental retrogastronomy, selected dishes were inspired by cookbooks, e.g. Schlesisches Kochbuch Therese Adam, Wiener Kochbuch Louise Seleskowitz, etc.
