Experimentální retrogastronomický workshop prezentoval výsledky vědeckého interdisciplinárního výzkumu kulinární kultury na příkladu pokrmů typických pro stravování a kulinární kulturu měšťanských a lidových vrstev. Teoretická část workshopu uvedla účastníky do problematiky obou kuchyní s uvedením typických surovin a pokrmů a jejich role v každodenním i slavnostním stravování. Teoretická část byla doplněna ukázkami experimentální retrogastronomie, vybrané pokrmy byly inspirovány kuchařskými knihami Anuše Kejřové a Marie Janků-Sandtnerové.
In English
The experimental retrogastronomic workshop presented the results of interdisciplinary scientific research into culinary culture, using examples of dishes typical of the diet and culinary culture of the burgher and lower classes. The theoretical part of the workshop introduced participants to the issues of both cuisines, presenting typical ingredients and dishes and their role in everyday and festive dining. The theoretical part was complemented by demonstrations of experimental retrogastronomy, selected dishes were inspired by cookbooks written by Anuše Kejřová and Marie Janků-Sandtnerová.
